Fasolakia (Greek Green Beans)

Ingredients:

Green beans

Tomatoes (diced or crushed)

Potatoes (user used a lot!)

Onion (chopped)

Olive oil

A little vinegar

Garlic (minced)

Fresh thyme

Vegetable bouillon

Sea salt and pepper to taste

Balsamic vinegar (for serving)

Crusty bread (for serving)

Instructions:

1. Add all ingredients (except balsamic vinegar and bread) into a slow cooker.

2. Cook on high for 6 hours, allowing flavors to meld and potatoes to soften.

3. Before serving, add a splash of balsamic vinegar for a tangy finish.

4. Serve warm with lots of crusty bread to soak up the delicious juices.
