Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

Ingredients:
4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 red bell pepper, roasted and diced
1 cup fresh spinach, chopped
1 cup mozzarella cheese, shredded
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 tablespoon fresh parsley, chopped (optional)
Instructions:
- Preheat the Oven:
Preheat your oven to 375°F (190°C).
- Prepare the Chicken:
Place the chicken breasts between two sheets of plastic wrap or parchment paper and gently pound them to about 1/2-inch thickness. This ensures even cooking.
Season both sides of the chicken with garlic powder, onion powder, salt, pepper, oregano, and basil.
- Prepare the Filling:
In a bowl, combine the roasted red bell pepper, chopped spinach, and shredded mozzarella cheese.
- Stuff the Chicken:
Place a generous amount of the red pepper, spinach, and mozzarella mixture in the center of each chicken breast.
Carefully fold the sides of the chicken over the filling and secure with toothpicks or kitchen twine.
- Sear the Chicken:
In a large skillet, heat olive oil over medium-high heat.
Add the stuffed chicken breasts and cook for 3-4 minutes on each side, until golden brown.
- Bake the Chicken:
Transfer the seared chicken breasts to a baking dish.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Serve:
Remove the toothpicks or twine, and sprinkle with fresh parsley if desired.
