olumpki Soup Recipe

Ingredients:

•1 lb ground beef (or a mix of ground beef and pork)

•1 small onion, diced

•3 cloves garlic, minced

•4 cups green cabbage, chopped

•1 large carrot, diced

•1 (15 oz) can diced tomatoes (with juice)

•1 (15 oz) can tomato sauce

•4 cups beef broth (or water with bouillon)

•1/2 cup uncooked cauliflower rice (or traditional white rice)

•1 tsp salt

•1/2 tsp black pepper

•1/2 tsp paprika

•1/2 tsp dried oregano

•1/2 tsp dried thyme

•1 tbsp Worcestershire sauce

•1 bay leaf

•1 tbsp apple cider vinegar (optional, for a slight tang)

Instructions:

1.Cook the meat: In a large pot or Dutch oven, brown the ground beef over medium heat. Drain excess grease if needed.

2.Sauté aromatics: Add the diced onion and minced garlic. Cook for 2-3 minutes until softened and fragrant.

3.Add vegetables: Stir in the chopped cabbage and carrots. Cook for another 5 minutes, stirring occasionally.

4.Simmer the soup: Add diced tomatoes, tomato sauce, beef broth, cauliflower rice (or regular rice), salt, pepper, paprika, oregano, thyme, Worcestershire sauce, and bay leaf. Bring to a boil, then reduce heat and let simmer for about 30 minutes, stirring occasionally.

5.Adjust seasoning: Taste and adjust salt, pepper, or add apple cider vinegar for extra tang. Remove the bay leaf before serving
