Homemade KFC-Style Baked Chicken

Enjoy that irresistible KFC-style flavor right from your oven! This homemade version is crispy on the outside, juicy on the inside, and packed with savory spice—no deep frying needed.
Ingredients
- 8 chicken drumsticks or thighs
- 1 cup buttermilk
- 1 ½ cups all-purpose flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried thyme
- ½ tsp dried basil
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper (optional for heat)
- Olive oil spray or melted butter (for crispiness)
Instructions
- Marinate the Chicken:
Place chicken pieces in a bowl and pour over the buttermilk. Cover and refrigerate for at least 2 hours, or overnight for best flavor. - Preheat the Oven:
Set your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it. - Prepare the Coating:
In a separate bowl, combine flour, paprika, garlic powder, onion powder, thyme, basil, salt, black pepper, and cayenne (if using). - Coat the Chicken:
Remove the chicken from the buttermilk, allowing the excess to drip off. Dredge each piece in the seasoned flour mixture until fully coated. - Bake:
Place coated chicken on the prepared baking sheet. Lightly spray with olive oil or brush with melted butter for a golden, crispy finish. - Flip and Finish:
Bake for 40–45 minutes, flipping the chicken halfway through cooking. Chicken is done when golden brown and fully cooked (internal temp: 165°F / 74°C).
