Homemade KFC-Style Baked Chicken

Ingredients

  • 8 chicken drumsticks or thighs
  • 1 cup buttermilk
  • 1 ½ cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • ½ tsp dried basil
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional for heat)
  • Olive oil spray or melted butter (for crispiness)

Instructions

  1. Marinate the Chicken:
    Place chicken pieces in a bowl and pour over the buttermilk. Cover and refrigerate for at least 2 hours, or overnight for best flavor.
  2. Preheat the Oven:
    Set your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it.
  3. Prepare the Coating:
    In a separate bowl, combine flour, paprika, garlic powder, onion powder, thyme, basil, salt, black pepper, and cayenne (if using).
  4. Coat the Chicken:
    Remove the chicken from the buttermilk, allowing the excess to drip off. Dredge each piece in the seasoned flour mixture until fully coated.
  5. Bake:
    Place coated chicken on the prepared baking sheet. Lightly spray with olive oil or brush with melted butter for a golden, crispy finish.
  6. Flip and Finish:
    Bake for 40–45 minutes, flipping the chicken halfway through cooking. Chicken is done when golden brown and fully cooked (internal temp: 165°F / 74°C).
