Italian Christmas Cookies

Pizzelle (Italian Christmas Cookies ) Recipe
These traditional Italian cookies are light, crisp, and perfect for the holiday season!
Ingredients:
3 large eggs.
¾ cup (149g) granulated sugar.
½ cup (113g) unsalted butter, melted and cooled.
1 tsp vanilla extract (or anise extract for a traditional flavor).
1 ¾ cups (210g) all-purpose flour.
2 tsp baking powder.
A pinch of salt (optional).
Instructions:
Step 1: Prepare the Batter
1. In a large mixing bowl, beat the eggs and sugar together until the mixture is pale and slightly thickened (about 2-3 minutes).
2. Add the melted butter and vanilla (or anise) extract, and mix until combined.
3. Sift the flour, baking powder, and salt (if using) into the bowl. Stir until the batter is smooth and thick.
Step 2: Heat the Pizzelle Iron
1. Preheat your pizzelle iron according to the manufacturer’s instructions. Lightly grease it if needed.
Step 3: Cook the Pizzelle
1. Drop about 1 tablespoon of batter onto the center of each pattern on the heated pizzelle iron.
2. Close the lid and cook for 20-40 seconds, depending on your iron, until the pizzelle are golden brown.
3. Use a spatula to carefully remove the pizzelle and place them on a wire rack to cool.
Step 4: Shape (Optional)
While still warm, you can roll the pizzelle into cones or tubes for filling, or leave them flat.
Serving Suggestions:
Dust with powdered sugar for a festive touch.
Serve plain or with coffee, tea, or hot chocolate.
For a special treat, spread Nutella, jam, or whipped cream between two pizzelle to make a sandwich cookie.
