Zest of 1 lemon

Instructions

1. Prepare the Cookie Cups

1. Preheat your oven to 350°F (175°C).

2. Grease a mini muffin tin or line it with paper liners.

3. In a medium bowl, whisk together the flour, baking soda, and salt.

4. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.

5. Add the egg and vanilla extract to the butter mixture and beat until fully combined.

6. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

2. Shape the Cookie Cups

1. Take about 1 tablespoon of cookie dough and press it into the bottom and up the sides of each muffin cup, creating a cup shape.

1. In a separate bowl, whisk together the eggs, sugar, flour, baking powder, and salt until smooth.

2. Add the lemon juice and lemon zest, mixing well until combined.

4. Fill and Bake

1. Spoon the lemon filling evenly into each cooled cookie cup, filling them almost to the top.

2. Bake for an additional 12-15 minutes, or until the filling is set and slightly golden on top.

3. Let the lemon bar cookie cups cool completely in the tin before removing.
