Chickpea Salad

Ingredients:

•1 can (15 oz) chickpeas, drained and rinsed

•1 cup cherry tomatoes, halved

•1 small cucumber, diced

•¼ red onion, finely chopped

•¼ cup fresh parsley, chopped

•¼ cup feta cheese (optional)

•2 tbsp olive oil

•1 tbsp lemon juice

•1 tsp red wine vinegar

•½ tsp garlic powder or 1 clove garlic, minced

•½ tsp dried oregano

•Salt and pepper to taste

Instructions:

1.In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, and parsley.

2.In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper.

3.Pour the dressing over the salad and toss well to combine.

4.Sprinkle with feta cheese if using.

5.Let sit for at least 10 minutes before serving for the flavors to meld.
