Chicken Piccata with Lemon Sauce Recipe

This light and flavorful dish is perfect for a quick and delicious meal!

Ingredients:

For the Chicken:

1 pound boneless, skinless chicken breasts, cut into thin slices.

½ cup all-purpose flour.

½ tsp salt.

¼ tsp black pepper.

2 tbsp olive oil.

2 tbsp unsalted butter.

For the Lemon Sauce:

1 cup chicken broth.

⅓ cup fresh lemon juice (about 2 lemons).

2 tbsp capers, rinsed and drained.

2 tbsp unsalted butter.

2 tbsp fresh parsley, chopped (optional).

Instructions:

Step 1: Prepare the Chicken

1. Place the flour in a shallow dish and season with salt and pepper.

2. Dredge each chicken slice in the flour mixture, shaking off any excess.

Step 2: Sear the Chicken

1. Heat the olive oil and 2 tbsp of butter in a large skillet over medium-high heat.

2. Add the chicken slices in batches (avoid overcrowding the pan) and cook for 3-4 minutes per side, or until golden brown and cooked through.

3. Transfer the chicken to a plate and cover to keep warm.

Step 3: Make the Lemon Sauce

1. Reduce the heat to medium and add the chicken broth to the skillet, scraping up any browned bits from the bottom.

2. Stir in the lemon juice and capers. Let the sauce simmer for 3-4 minutes to reduce slightly.

3. Stir in the remaining 2 tbsp of butter until melted and smooth.

Step 4: Combine and Serve

1. Return the chicken to the skillet, spooning the sauce over the top to coat. Cook for 1-2 minutes to reheat the chicken.

2. Garnish with fresh parsley, if desired.

Serving Suggestions:

Serve over cooked pasta, rice, or mashed potatoes to soak up the flavorful lemon sauce.

Pair with a side of steamed vegetables or a crisp green salad.
