Fluffy Ricotta-Almond Dumplings with Honey Drizzle

Ingredients:

1 cup almond flour
1 cup ricotta cheese
2 tablespoons honey (plus extra for drizzling)
1 teaspoon vanilla extract
1 large egg
1 teaspoon baking powder
A pinch of salt
Optional: Powdered sugar or crushed almonds for garnish
Directions:

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine almond flour, ricotta cheese, honey, vanilla extract, egg, baking powder, and a pinch of salt. Mix until a smooth batter forms.
Using a spoon, scoop the batter into small mounds (about a tablespoon each) and place them on the prepared baking sheet.
Bake for 12-15 minutes, or until the pillows are lightly golden and slightly puffed.
Allow to cool for a few minutes before drizzling with honey. Optional: Dust with powdered sugar or sprinkle with crushed almonds.
